Adding juicy, in-season strawberries to a salad serves as a delicious surprise and maybe even tricks your kids into eating their vegetables and fruits all in one dish. Whether you’re having a refreshing salad as your main course or as a side dish, it’s easy to assemble the perfect summer salad.

Spinach Strawberry Salad (Serves 3)

This simple salad made of spinach, strawberries and onions must be made fresh and never be frozen. The dressing recipe can be tripled and will last up to 1 month in the refrigerator. For added protein, try adding chicken to this recipe.


3 lbs of spinach

6 cups of fresh strawberries (sliced)

¾ cup of fresh tarragon (chopped)

¾ small red onion (thinly sliced)

1 ½ cups almonds (sliced)

¼ cup + 2 tbsp balsamic vinegar

3 tbsp honey

¼ cup olive oil

1 ½ tsp lemon juice

1 ½ tsp dried tarragon

1 ½ tsp kosher salt

1 ½ tsp black pepper

1 tbsp water



  1. In a large bowl, combine the spinach, strawberries, fresh tarragon and onion.
  2. Toss salad, mixing it well, and set aside.
  3. In a jar with a lid, combine the vinegar, honey, olive oil, lemon juice, dried tarragon, salt, pepper and water.
  4. Screw the lid on tightly, and shake jar, mixing it well.
  5. Pour the dressing over the salad just before serving and toss to coat.
  6. Garnish the salad with almonds, and it’s ready to serve!
