Dream Dinner Franchise Recipe of the Month: Pumpkin Icebox Pie

Dream Dinners Franchise Pumpkin Icebox Pie

Ingredients (Serves 6)

Nonstick cooking spray

2 cups of crushed graham crackers

¼ cup of low-fat yogurt-based spread or butter (melted)

1 ¼ cups plus 2 tablespoons of sugar

1 15 oz. can of 100 percent pure pumpkin

1 teaspoon of kosher salt

1 teaspoon of ground ginger

½ teaspoon of nutmeg

1 ½ teaspoons of ground cinnamon

2 cups of nonfat nondairy whipped topping

½ teaspoon of vanilla extract

3 cups of nonfat vanilla ice cream (softened)

½ cup of chopped pecans

1 9×13 inch baking dish


  1. Spray the baking dish with nonstick cooking spray.
  2. In a large bowl, combine the graham cracker crumbs, melted butter or margarine spread and sugar and stir thoroughly until well mixed.
  3. Press mixture evenly into the bottom of the baking dish and set aside.
  4. Combine the pumpkin, salt, ginger, nutmeg, and cinnamon in a large bowl, gently folding the ingredients together until well mixed.
  5. Spread the mixture evenly over the crust.
  6. In a large bowl, combine the whipped topping, vanilla extract and ice cream and stir until incorporated.
  7. Spread mixture evenly over the pumpkin layer.
  8. Cover with plastic wrap and freeze until ready to serve.

When your feast is over and it’s finally time for dessert, remove the pie from the freezer about 15 minutes before you’re ready to serve it. Cut the pie into squares, and it’s finally time to enjoy!
